Here's about the shortest version I can do...
There are actual several reasons. They include horse jockeys and trainers referred to racing New York as the Big Apple in the 1920s. Also, in the late 1920s and 1930s New York's jazz musicians began referring to the city as the Big Apple.
Those are two of the big ones...but I ran out of words! Honestly, it was those two and a few others all combined that lent it to becoming the phrase we know today.
